Our Oysters

Delaware Delicious Oysters spend their entire life floating in the fast moving currents just inside the Indian River Inlet where the Atlantic Ocean and the Rehoboth Bay waters meet.  With salinity consistenly between 25 - 30 and an abundance of nutrients we grow a totally organic, salty well rounded oyster.  Our oysters explode with flavor and keeping them off the bottom means a healthier oyster with no grit.  We harvest daily so only the freshest oysters are delivered to our customers.


Delaware Delicious Oysters

Our largest oyster (3 1/2-4 1/2 in.) On the raw bar this oyster is a mouthful of salty sweet oyster!  Perfect on the grill or in the oven with a deep cup to hold all the natural juices as well as your toppings!

Slower Lower

On every farm there are always those oysters that take their own sweet time getting to market size.  This extra time in the salty waters of the Rehoboth Bay creates a meatier, saltier oyster with a beautifully deep cup to hold its luscious brine.  You can’t rush perfection.  Slurp them slowly and enjoy!

Salty Kiss

This small (2-2 1/2 in.) delicate, cocktail size oyster is perfect for any raw bar.  With or without lemon and sauces you will be left with a kiss of salt on your lips that will bring you back for more!

Happy Ending

Our perfect (3-3 1/2 in.) oyster that explodes with its salty flavor followed by the sweet creaminess of the oyster.  Wether you serve this oyster raw or in your favorite recipes this could be the perfect beginning or the happy ending to your dining experience.


Our Process

We purchase our seed from an oyster hatchery.  The seed is then sent to an approved laboratory to verify it is free of any disease before is is brought into Delaware.  We follow all DNREC regulations and safety standards.

Once our baby oysters arrive in Delaware they are placed in mesh bags and acclimated to the appropriate temperature before their first trip to the Rehoboth Bay.

We then place them in their new home, the swift moving currents of the Rehoboth Bay.  The bags are clipped to our long lines where they will then float, soaking in all the natural nutrients, sun and salt our bay provides.

Throughout their lives the oysters will be pulled and put into clean cages.  Three to four times they will be run through the tumbler to chip off the lip of the oyster and hand craft the shell to grow a deeper cup and meatier oyster.

The oysters are then put back into the waters of the Rehoboth Bay to continue to grow in our favorable climate and conditions until they reach market size.

Once our oysters reach market size, we harvest daily depending on our orders.  We harvest 365 days a year.  In the summer months we use ice baths to cool the oysters immediately to meet all safety standards.  In the winter months, we bundle up no matter the weather to keep our customers’ orders coming!
